I opened The Irish House because of where I come from and what I love. My dad is Irish and my mum is Scottish, so Celtic roots run right through me. The problem was, there was nowhere nearby to watch Celtic properly. I got tired of hopping between bars that never felt right — so I had an idea: why not create the place myself?
